OK, so I have to give in to my guilt every now and then. I am not the most observant Jew, but I try to host a Passover Seder once a year. I am keeping with the tradition in hopes my kids will remember it one day:) Part of the fun of Passover is cooking Apple Fritters with my daughter. They are like a delicious mini donut….so good! Here you go:
1 cup Matzoh meal
3 eggs beaten
1 tsp salt
3/4 c water
2 medium, tart apples peeled and chopped
2 Tbsp sugar
1 tsp cinnamon
Combine the eggs, salt and water. Add to the matzo meal. Add apples, sugar and cinnamon. Blend well. Drop by tablespoon into 1 inch deep hot oil (I use Canola Oil) until golden brown. Drain on absorbent paper. Sprinkle with more cinnamon sugar if you like.
I used a oil fryer (which we literally use once or twice a year) to make these. They are so simple and delicious!
